Chiles en
nogada is typically served in September. Originally from Puebla,
chiles en nogada are made from green, white and red ingredients
to symbolize the colors of the Mexican flag. Roasted poblano chiles
are stuffed with a pork and fruit picadillo filling and served at
room temperature with a fresh walnut cream sauce topped with pomegranate
seeds.
