Commercializing mesquite meal and pods represent more than placing unusual flavoring items on the market. The purpose of marketing mesquite products is to demonstrate that mesquite forests in many parts of the world can produce much greater wealth by harvesting their yields than by cutting down trees for rangeland, firewood or charcoal.

Our supply of mesquite powder and pods is harvested in rural areas where economic options are few. By providing a greater return to the producers than can be obtained from other uses of mesquite, we are increasing the value of a resource and coupling the conservation of important mesquite woodlands with economic propserity.

In addition, PROMEZ's operation will return a percentage of its profits to Friends of PRONATURA, an organization founded in 1985 to promote the conservation of natural and cultural diversity in Mexico and U.S. borderlands.

MESQUITE MEAL

You may know about the aromatic powder or meal that is used as an enhancer for flavoring of bread, cereal, deserts and a large variety of other foods. If not, you have not tried mesquite meal, a tasty, nutritious condiment ground from the bean pods of the mesquite tree.

After years of testing and experimenting, PROMEZ is pleased to announce that we can offer mesquite meal as a natural desert food.

Modern milling techniques grind the entire mesquite pod, including most of the protein-rich seed. This produces a meal that is highly nutritious as well as flavorful. The meal ground from the pod contains 11 to 17 percent protein. A high lysine content makes it the perfect addition to other grains that are unusually low in this amino acid.

Since the flavor and nutritional value of mesquite meal is high, it should be regarded more as a condiment rather than a conventional flour or meal. Most of the recipes we have developed use no more than 30 percent mesquite meal by volume.

Although desert dwellers have used mesquite pods as a source of food for centuries, when you order and use this product, you become part of a pioneering network of chefs and nutritionists who are working together to discover new uses for this tasty food. We include several recipes taken from a recipe booklet that is included in the packages of mesquite meal. These provide an idea of the uses of this product; however, this is only a departure point, and your imagination can provide many additional applications.

Add it to soups, gravies and sauces, casseroles, vegetable and meat dishes, pie crusts, or sprinkle on desserts such as fruit compotes, puddings and ice cream.

MESQUITE PODS

Another product that PROMEZ offers is mesquite pods. These are subsitutes for mesquite charcoal or mesquite wood chips for flavoring food cooked on barbeque grills.

A fistful of moistened pod fragments scattered on a hot barbeque grill, either briquette or gas fired, adds a disitnctive mesqutite flavor to your broiled or grilled foods.

This is a convenient and low-cost alternative for savory mesquite flavored foods as you help to conserve natural resources.
